WIAW – Food & thoughts on fitness!

So I’m pretty sure I suck at these WIAW posts, as you will see evidenced in the photos below.  I have every intention of taking a pic, and then before you know it – poof!  Empty plate lies before me.  Bad blogger!

Regardless - here’s what I ate yesterday…make sure to check out Peas & Crayons for other “What I Ate Wednesday” posts by bloggers who actually remember to take photos!

Breakfast:

Doin’ good, took a pic of my macadamia cookie-flavored coffee and Truvia…

…plus remembered to snap a pic of my cinnamon Ezekiel toast on the way out the door….

…then, doh!  Scarfed down a container full of greek yogurt and mixed berries at work…so here’s some dirty Tupperware for ya ;)

Snack #1:

Lunch:

Moving on, I actually got up early in the morning to roast some veggies to take to work for lunch.  So here’s the before pic of the lovely colorful veggies….

…and wouldn’t you know that I forgot to actually take a photo of the finished product for my lunch.  Picture the veggies above all roasted up nicely along with some turkey meatballs, which looked somewhat less presentable than this picture that I borrowed off o’ the ‘net…

I fail again.  I did remember to snap my next snack – some sliced cucumbers and hummus:

Finally, we had some friends stop by yesterday after work and my hubby ordered a GINORMOUS  platter of sushi!

We deSTROYed it, standard ;)

All in all, it was a good day of eats!

Since this month’s WIAW theme is “Food & Fitness,” I wanted to ask your opinion on CrossFit.  Anyone out there a fan? Or a Crossfitter?

I’m really feeling like I need to do something new.  I’m ready to shake up my fitness routine again…I’ve been feeling a little blah lately.  I was looking at the website for the upcoming CrossFit games and damn, those chicks are so badASS!  Girl crush, girl crush!

So what do you think?  There’s a CrossFit facility near me…should I call them up and try out a class?  What should I expect?  Will I get my booty handed to me??  I value your opinion! :)

WIAW – Sensible Snacks

Good morning, lovelies!  Time for another WIAW (What I Ate Wednesday), courtesy of Peas and Crayons.  This week’s theme is “sensible snacking.” I love to snack throughout the day but usually try to make sure the snack contains at least one fruit or vegetable to make sure the snack stays low-cal and full of fiber!

Breakfast:  My favorite Special K Protein Plus cereal and unsweetened vanilla almond milk.  I can’t deal with a hot breakfast in the summer – blech!

On the road to work:  Trader Joe’s Crimson Blossom Tea (iced of course) mixed with a scoop of Isagenix Want More Energy.  And yes, I do ”want more energy!!”  This nasty summer cold is knocking the energy right outta me :(

Sensible Snack:  2 hard-boiled  eggs and a big bunch of the most delicious organic green grapes

Lunch:  (unpictured) A tuna sandwich on Arnold thin bread and a cup of the gazpacho I made over the weekend

Sensible Snack:  Some sliced up peppers and the rest of my Trader Joe’s spicy hummus

Dinner:  Shredded chicken that I cooked all day in the crock pot with some salsa, over a bed of romaine lettuce, black beans, and hot sauce, and topped with a dollop of greek yogurt

And there ya have it!  Not the most exciting or pretty day of eats – to be honest, my appetite is a bit lackluster due to my cold, but I’m just trying to stay hydrated and eat as cleanly as possible.

Yummy weekend eats

Hey friends!  My sweetheart and I have been doing a lot of relaxing and eating this weekend :)

On Friday night, I was in the mood to do some cooking, so I whipped up a few of my favorites for dinner:

Crab cakes topped with garlic aioli, roasted asparagus, and corn salad.

I love making crab cakes!  I like them the REAL way, with very little filler and lots of good crabmeat :)  I vary the recipe each time, and I never measure anything, but here’s my best approximation of Friday night’s recipe for you:

Crab Cakes

Ingredients:

  • 2 8oz. containers of lump crab meat (1 lb. total)
  • 2 TB reduced-fat mayonnaise
  • 1 tsp dijon mustard
  • 2 scallions, thinly sliced
  • 1 egg, beaten
  • 1/4 cup breadcrumbs
  • salt and pepper to taste
  • cayenne pepper
  • olive oil

Instructions:

  • In a large bowl, mix the beaten egg, mayonnaise, dijon mustard, and scallions
  • Gently fold in the crab meat and breadcrumbs
  • Season with salt, pepper, and cayenne pepper
  • Mold into 5 patties (you may have to add a little more breadcrumbs to help hold it together)
  • Place on a plate and refrigerate for at least 20 minutes and up to 2 hours to the crab cakes set
  • Heat a skillet over medium-high heat with a drizzle of olive oil
  • Add the crab cakes and brown for about 3 minutes on each side
  • Enjoy! :)

Makes 5 – 6 servings
Calories per serving:  138
Protein:  18 grams
Carbs:  5 grams
Fat:  4 grams

p.s. The corn salad pictured above is TO DIE for!  Get the recipe here!  (I added one chopped up jalepeno for a little extra heat, which was delicious).

I also made a big batch of gazpacho to enjoy for my lunch next week:

Again, this is another recipe that I’ve made a few times over the years, so the ingredients change each time I make it.  But here’s what’s in this batch:

Spicy Gazpacho

Ingredients:

  • Approximately 1/2 a bottle of Spicy V8 juice (I use the low sodium version)
  • 1/2 of a large red onion, finely chopped
  • 1 can of black beans, rinsed (again, I use the low sodium version)
  • 1 can of petite-diced tomatoes with jalepenos
  • 2 zucchinis, chopped
  •  1/2 a bag of frozen corn
  • 1 clove of garlic, chopped
  • drizzle of good olive oil (approximately 2 tablespoons)
  • drizzle of red wine vinegar (approximately 2 tablespoons)
  • salt and pepper, to taste
  • cayenne pepper, to taste

Instructions:

  • Dump everything in a big bowl
  • Refrigerate overnight so the flavors have a chance to develop
  • Devour :)

Makes 6 servings
Calories per serving:  162
Protein:  7 grams
Carbs:  27 grams
Fat:  5 grams

WIAW – Joining the party

I’ve decided to join the party over at Peas and Crayons and participate in “What I Ate Wednesday!”

Some of you have asked what I eat in a typical day, so here we go – this is everything start to finish that I devoured yesterday (so…eh…technically, it’s “what I ate Tuesday,” but details, details….).  Apologies for the crappy iPhone pics – apparently I’m the only human on the planet still using the 3G iPhone.  Yeah, I know, the quality is no good! ;)

Breakfast was the standard:  my favorite steelcut oats with mixed berries, egg whites scrambled with chopped up broccoli, and a cup of coffee with a splash of organic half & half and a packet of Truvia.  The coffee was from our Keurig – chocolate raspberry truffle <3

Snacks that I packed up for my day included an apple, some salted almonds, baby carrots, and spicy hummus from Trader Joe’s:

 Lunch:  A yummy salad made up of romaine, sliced red and orange peppers, sliced turkey deli meat, and a little bit of reduced fat feta cheese.  I always make my own dressing; this one was a little olive oil and balsamic dressing, plus a sprinkle of garlic powder and italian seasonings.  I just shake it up and pour it on my salad when I’m ready to eat:

My amazing husband is such a sweetie pie…now that we work in the same office (!!) he can drop by and see me from time to time…well, he brought me my favorite thing ever….a LARABAR!  I noshed on one of these late in the afternoon:

 OK, and here’s where I’m completely kicking myself…we had the bombest dinner ever last night AND I had my nice camera on hand so I could have taken some more attractive photos….well, wouldn’t you know that T and I got back from walking Pickles around the ‘hood after dinner and I was like, DOH!  I totally forgot to take pics.  So – these pics are not mine but this is what we had for dinner :)

Ribeye steak cooked on the grill (my portion was about 3 oz.):

Served with steamed artichoke, which we dipped in Trader Joe’s aioli:

 And of course, served with a glass of pinot grigio ;)
